Peel a squash, grate it and cut it in half with a knife and a teaspoon.
For the peppers, cut the lid with the tail and with the help of a teaspoon, dig out the ribs and remove the seeds. We wash them and let them drain until we prepare the filling.
Wash the rice and leave it in a little cold water.
Chop the cleaned vegetables into small cubes and sauté them in oil and a little water. After the mixture of vegetables and meat has cooled, add half of the chopped parsley, fill the zucchini and peppers for about three quarters, cover them with a slice of tomato and place them in the bowl in which we will boil them. Add the sauce over them and the rest of the water until they are almost covered and boil them over medium heat for about 40 minutes.
We taste the sauce along the way and we realize if it still needs salt or spices. When we turn off the heat, add the rest of the chopped parsley.
