  • 375g plain flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon bicarbonate of soda
  • 1 teaspoon salt
  • 200g butter
  • 100g margarine
  • 275g dark brown soft sugar
  • 200g caster sugar
  • 4 ripe bananas, mashed
  • 5 eggs
  • 2 teaspoons vanilla extract
  • 125ml milk
  • 120g chopped pecans
  • Caramel drizzle
  • 120g butter
  • 4 tablespoons dark brown soft sugar
  • 4 tablespoons caster sugar
  • 1 teaspoon vanilla extract
  • 4 tablespoons double cream

MethodPrep:30min ›Cook:1hr30min ›Extra time:30min cooling › Ready in:2hr30min

  1. Preheat an oven to 170 C / Gas 3. Combine flour, baking powder, bicarbonate of soda and salt in a bowl. Set aside. Grease and flour a 25cm Bundt cake tin.
  2. Beat 200g of butter, margarine, 275g of brown sugar and 200g of caster sugar with an electric mixer in a large bowl until light and fluffy. The mixture should be noticeably lighter in colour. Add the bananas, followed by the eggs one at a time, allowing each egg to blend into the butter mixture before adding the next. Beat in 2 teaspoons of vanilla extract with the last egg. Pour in the flour mixture alternately with the milk, mixing until just incorporated. Fold in the pecans; mixing just enough to evenly combine. Pour the batter into prepared cake tin.
  3. Bake in the preheated oven until a skewer inserted into the centre comes out clean, about 1 hour and 20 minutes.
  4. Meanwhile, prepare the glaze. Heat 120g of butter, 4 tablespoons of brown sugar, 4 tablespoons of caster sugar, 1 teaspoon of vanilla extract and cream in a saucepan over medium heat. Stir continuously until the sugars have dissolved, then gently simmer for 1 minute. Pour over baked cake while still in the tin. Cool in the tin for 10 minutes before removing to cool completely on a wire rack.

Caramel Banana Cake

There’s a story in my family about the first time my mother made my father banana cake. They had been married for a few years, but this was the first time she had whipped out this moist, multi-layered cake. My father took a few bites in silence, then looked up at my mom, wide-eyed. “Have you always known how to make this?”

This banana cake I give to you today isn’t quite the same one my mom makes, but I always think of that story when I make it. A good banana cake is dense and moist, but not heavy. It gives pleasure in every bite.

This particular cake takes those qualities over the top. In fact, it is probably the moistest cake I have ever made. Homemade caramel sauce is swirled throughout this cake, so it walks the edge between a cake and an old-fashioned English pudding, absolutely silky with banana and gooey streaks of caramel that create strata of even moister cake layered with that burnt, brown sugary richness.

In the past, I’ve made this in two 9-inch cake pans. But lately I’ve been making it in three, which is a bit safer and easier (those two would always be full to overflowing!). It’s perfectly fine served on its own, with no topping other than a light dusting of confectioner’s sugar, but if you want to take this really over the top, make people’s eyes go wide, serve it as I do here, with caramel-flavored buttercream between the layers and extra caramel sauce drizzled over top.

I served this cake to my dad at his 60th birthday party this week, knowing it was close to his favorite cake. Sliced up it generously fed all 10 of us, with plenty left to send home as sweet leftovers.


ONE BOWL BANANA CAKE WITH CARAMEL DRIZZLE

Over the years, I’ve made lots of banana cakes and breads both in my work and for others – this one is the easiest. Throw everything into one bowl, scrape the cinnamon-scented batter into a bundt pan, bake for 50 minutes and done! Well, there’s the caramel drizzle too. That’s a must. This is also one of the nicest banana baked goods I’ve ever tried. That’s coming from someone who isn’t fond of bananas. One Bowl Banana Cake with Caramel Drizzle could sway me.

You’ve heard or read how the older and blacker a banana is the better it is to bake with. I say it’s not so. I did an experiment and those old, black bananas lurking in the banana cemetery in our freezers can actually make cakes, muffins and bread gummy, gluey, stodgy…you get my drift. Ripe bananas are the best to use. Ripe but not blackened and mushy. Save the overripe, freezer bananas for your smoothies.

I found this recipe in a newly acquired cookbook – ‘Basics to Brilliance‘ by Donna Hay. I have several of her books but this by far is the best. I’ve cooked several recipes from this cookbook. Most of them have worked beautifully. The photography, in true Donna Hay form, is gorgeous. The recipes approachable with on-hand ingredients. If you’re looking for a solid cookbook you’ll actually use, this is the one. It’s big, filled with good, solid recipes.

This cake uses oil instead of butter, as per the original recipe. Oil gives baked goods a light texture and a tight crumb. Plus it doesn’t require use of another vessel to melt the butter, ie: less washing up. It’s a lovely light cake with a moist texture and caramel icing drizzle – my favorite part.

So, I just looked at my website (you know, this one) and discovered there’s not one banana recipe on here. I told you I didn’t like bananas. It’s a bit of a deal then I’m posting this recipe so take note. It’s a keeper. Toodles, Lovoni xo

Caramel Banana Cake Roll

I love making pie rolls. They look so stunning and are so easy to assemble. This candy and banana cake roll is a light version of the typical cake roll. Ingredients

For the cake:
1 cup of cake flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon baking powder
2 eggs
3/4 cup sugar, divided
1/2 cup ripe banana puree (about 1 medium)
1 teaspoon vanilla extract
3 egg whites
1 tablespoon of confectioner’s sugar

For the stuffing:
4 ounces of reduced-fat cream cheese
1/2 cup of packed brown sugar
1/2 teaspoon vanilla extract
1 cup reduced-fat whipped topping

For the topping:
1 tablespoon of confectioner’s sugar
2 tablespoons of fat-free caramel ice cream.

Instructions

Preheat the oven to 375 degrees.
Spray a 15 x 10 x 1-inch baking pan with nonstick cooking spray line with parchment paper and spray the top of the parchment paper with nonstick cooking spray set aside.
Combine flour, baking soda, salt, and baking powder.
In a large bowl, beat eggs for 5 minutes add half a cup of sugar, banana, and vanilla.
In a small bowl, beat the egg whites at medium speed until they form soft peaks.
Gradually add the remaining sugar to the egg whites, one tablespoon at a time, over high heat until firm peaks form.
Add the flour mixture to the banana mixture mix gently until combined.
Stir in egg white mixture.
Sprinkle into prepared pan.
Bake for 10-12 minutes or until cake comes back out when touched lightly.
Cool for 5 minutes run knife around edges to loosen.
Place cake on a tea towel sprinkled with confectioner’s sugar.
Gently remove the parchment paper.
Roll the cake in a jelly roll, starting with the short side.
Cool completely on a wire rack.
Once the roll has cooled, unroll the cake.
Because the cake has cooled in a rolled-up position, it will easily be rolled back up.

For the filling:
In a mixing bowl, beat the cream cheese and brown sugar until smooth and the sugar dissolves.
Beat in the vanilla fold in the whipped topping.
Roll out cake and spread filling evenly.
Roll up again

For the Topping:.
Sprinkle with confectioner’s sugar and caramel ice cream drizzle.
Store in the refrigerator.

As many of you will know, here at Lovefoodies, we love cake! We have many pound cake recipes , with flavors to suit everyone.

For this recipe, we've used some delicious caramel, or dulce de leche throughout the cake, and also added a handful of nuts in the batter to give an added texture to the cake.

The flavor you get in every bite is wonderful banana and caramel and of course the unmistakable taste of a buttery pound cake.

This recipe for caramel banana loaf is flexible so if you wish, you can make them in muffin liners, such as the photo below, where I've used this same recipe, but added some cocoa powder into the batter too so it takes on a chocolate flavor (this recipe will make you around 12 large muffin-sized cakes).

For the recipe below, you will need a loaf tin, mine measures 30cm x 12cm and 8cm deep. This recipe will also work in a regular 9 inch up to 12-inch loaf pan, same cook time.

This caramel banana loaf will make a perfect treat for a breakfast or brunch, or an after-school snack when the young ones come home. You can take on a picnic or give it to a friend.

Whatever you decide, it will certainly be enjoyed! It's freezer-friendly too, so if you wanted to bake a loaf and cut in half, freeze half, and that way, you will always have some delicious caramel banana bread handy!

The recipe itself is very easy and straight forward. You do need to be aware that cook times may vary a little from oven to oven so do a check when the time is up for doneness.

Banana Caramel Cake

HEAT oven to 350° F. Coat 13x9-inch baking pan with no-stick cooking spray.

BEAT cake mix, cinnamon, eggs, water and oil in medium bowl with an electric mixer on medium speed for 2 minutes, scraping bowl occasionally. Beat in mashed bananas. Stir in nuts. Spread in prepared pan.

BAKE 34 to 36 minutes or until toothpick inserted in center comes out clean. Cool 45 minutes. Serve warm. Top each serving with sliced bananas. Drizzle with caramel syrup.

Brazil is known for its banana cakes, and what better accompaniment than a luscious drizzle of caramel or doce de leite?

Heat the oven to 200°C (180°C fan) mark 6. Line a 23cm (9in) loose-bottom cake tin with baking parchment.

Whiz two of the bananas to a smooth purée in a food processor with the rum. Set aside.

In a large bowl, beat the butter and sugar with an electric whisk until light and fluffy. Gradually add the eggs one at a time, beating well after each addition. Fold in the flour, baking powder, spices and desiccated coconut, then beat in the banana purée until smooth. Spoon into the prepared tin and level the top. Immediately turn the oven temperature down to 180°C (160°C fan)
mark 4 and bake for 35min until risen and springy to the touch. Cool in the tin for 20min before removing and cooling on a wire rack.

Transfer to a serving plate. Cut the remaining bananas into diagonal slices and pile them on top of the cake. Warm the caramel or doce
de leite in a small pan for a few seconds to loosen it slightly. Pour half of it over the cake and sprinkle with the coconut shavings. Serve the remaining caramel or doce de leite in a jug alongside the cake.
