The potatoes are cleaned, washed, cut into slices and boiled in salted water. How to prepare meatballs with mashed potatoes

To prepare the meatballs, pass the onion and garlic through the mincer and mix them with the minced meat. We soak the peanut kernels in milk, then we squeeze well and we add over the minced meat. Add the finely chopped green parsley and dill, eggs and season with salt, pepper and thyme. Form the meatballs and fry them in an oil bath.

To prepare the puree, we peel the potatoes, chop them into cubes and boil them in salted water. When they are well cooked, we drain them and pass them through a blender with butter, then we dilute them with hot milk, until we get the desired consistency. We pass the mashed potatoes through a sieve to become fine.

For the sauce, chop the onion finely and temper it in oil, add the grated carrot and a tablespoon of brown sugar and caramelize them. Drizzle a little potato juice and season with salt and pepper. Add the peeled and chopped tomatoes from the knife, small pieces, basil leaves, thyme and 2 cloves of grated garlic. Boil the sauce until it drops and binds well.

We enjoy the delicious meatballs on a puree bed, glazed with a little sauce, beautiful dream, in childhood.


Spicy meatballs in sauce, under the lid of mashed potatoes

Usually when I make meatballs, I make a lot and eat hot with mustard, then for the ones that remain I make a sauce, but this time I made it like a pudding, with mashed potatoes. They are very good!

  • For meatballs:

  • 1 jar zacusca (400 gr)
  • 3 tablespoons wasted juice
  • 1 teaspoon sugar
  • For puree:
  • 1 Kg of potatoes
  • 30 gr butter
  • 150 ml of milk
  • the water
  • salt
  • chopped basil
  • 4 cloves of garlic
  • 150 gr smoked Delaco cheese

First we prepare the meatballs.

We clean the vegetables and wash them, then we pass the onion and the garlic through the mincer or robot and we mix them with the minced meat.

We pass through the mincer and the potatoes with the carrot, we squeeze them well by the juice they leave and we mix them with the minced meat.

Add salt, pepper, thyme and two whole eggs and mix.

Form round and small meatballs and fry them in hot oil on all sides, then take them out in a sieve or absorbent towels to remove the oil.

Meanwhile, we prepare the puree.

We clean the potatoes, wash them and boil them in salted water.

When they start to crumble, drain them and pass them together with the cleaned and pressed garlic, the chopped basil. Add the butter and dilute with hot milk.


For the sauce, mix the zacusca with the tomato juice and sugar.

In a heat-resistant form, place the meatballs, then add the sauce and cover with the mashed potatoes.

Bake for 15 minutes at 180 degrees, then remove and grate the cheese on top, then put back in the oven for 5 minutes.


Fasting meatballs from potatoes and rice - recipe

ingredients

  • 2 white potatoes
  • 50 g of round rice
  • 1 onion
  • 3 cloves of garlic
  • 30 ml of oil
  • 1 teaspoon paprika
  • salt and pepper to taste
  • 1 bunch of green parsley

Method of preparation

Wash the potatoes and boil them in their skins. They will be much tastier than peeled boiled ones.

After they have cooled, remove the skin and pass with a puree tool or a fork.

Wash the rice and boil it with 150 ml of water. Add a little salt. After boiling, allow to cool.

While the rice is boiling, peel the onion and garlic. Finely chop the onion and sauté it in a little oil until it becomes transparent.

When the mashed potatoes and boiled rice have cooled, mix all the ingredients in a bowl, including finely crushed garlic, salt, pepper, paprika and finely chopped parsley.

Preheat the oven to 180 degrees Celsius. Line the oven tray with oil and baking paper.

If the composition of the meatballs is soft, you can add 1 tablespoon of flour.

Moisten your hands in water and shape the composition into balls, giving them the appearance of round or oval meatballs, as desired. Meats can be smaller or larger.

After filling the tray, place it in the hot oven and let the meatballs bake for 25 minutes. After this interval you will have to turn them with a spoon.

Let them brown on the other side for a quarter of an hour, then remove them with a spatula on a plate.

Allow to cool, then serve. They are just as good and warm and cold.

They can be served as such, with a salad of vegetables or greens, or with a dish of mushrooms or vegetables.

Mashed potatoes with mashed potatoes and chives

Peel a squash, grate it and boil it in boiling salted water for about 20 minutes.

Meanwhile, peel the onion and cut into cubes. Heat the oil in a pan and fry the onion in it for about 2 minutes, turning it from side to side until translucent, then remove and mix in a bowl with the minced meat, egg, 2 tbsp. of cream, paprika and breadcrumbs. Season with salt and pepper.

Extinguish the sauce with the soup, add 150 g of cream, 1 teaspoon of cranberries and simmer for about 2 minutes on low heat. The sauce is thickened with the thickener, then seasoned with salt, pepper and nutmeg. Add the meatballs to the sauce again and keep warm.

Heat the milk and butter in a pot. Drain the potatoes, pass through a potato press in the hot milk and mix. Season with salt and nutmeg. The bundle of chives is washed, dried by shaking and, with the exception of a few threads for decoration, cut into fine rolls and passed into a puree.

The meatballs are placed on plates with cream sauce and puree. Decorate with the rest of the chives and serve with the rest of the cranberries.

Buckwheat and potato meatballs, cooked in the oven

I was telling you when I wrote the buckwheat risotto recipe (see here) that I soaked 500 grams of buckwheat from which I prepared a bunch of food. I made that risotto, I put it in a soup instead of rice, I also made a tray full of these meatballs, and even a quick dessert.

As I liked everything I prepared from soaked buckwheat, I decided to pose to post the recipes on the blog. As we are going through a more difficult period these days, I hope that these buckwheat recipes will help you cook tasty dishes using ingredients that (I hope) are still in stores.

It is unlikely that all the buckwheat stocks in stores have run out, as happened with the flour and yeast that have now disappeared from the market. Buckwheat is less cooked in our country. A lot of people turn up their noses when they hear about it. Even I thought the same thing until recently when I got used to trying to cook it in such a way that it was to my taste. And I succeeded, I say.

Maybe this combination of buckwheat and potatoes seems a little strange, maybe some will say that the combination is not ok. I wouldn't know what to tell you about this. But I can tell you for sure that they are tasty. And the fact that they are cooked in the oven makes them, I say, a healthy choice.

Initially I was going to make this fasting recipe but the composition was too wet and did not bind so I found the solution by adding 2 eggs. I didn't have a vegan egg substitute on hand, but if you want to fast, you can try replacing the egg with chickpea flour, for example. Or flax seeds, chia, etc.


How to make meatballs from rice and potatoes - recipe

Total cooking time: 1 hour and 10 minutes
Number of servings: 16 small meatballs

  • 50 g of round grain rice
  • 2 potatoes
  • 1 onion
  • 2 cloves of garlic
  • 1 teaspoon of paprika
  • 1 bunch of green parsley
  • 30 ml of oil
  • salt, pepper and other spices to taste

Method of preparation

Start by washing the potatoes and boiling them, along with the peel.

Wash and boil the rice separately in 150 ml of water. Add a little salt. After it has boiled, leave it to cool.

After the boiled potatoes have cooled a little, you can peel them. Then pass them with a fork or puree tool.

Peel and finely chop the onion. To give the meatballs a better taste, sauté it in oil in a pan until it becomes transparent.

If you want to bake the meatballs in the oven, preheat it to 180 degrees.

Put a little oil in the pan and lay out a sheet of baking paper.

In a large bowl, mix the cooked rice and mashed potatoes. Put the hardened onion and crushed garlic.

Add paprika, salt and pepper to taste. Chop the parsley and place it over the rest of the ingredients.

Mix the composition by hand to obtain a homogeneous paste.

If it is too soft, you can add 1 tablespoon of wheat flour, soy or chickpeas.

Soak your hands in water or oil and take a piece of the composition. Shape it into a ball. Make meatballs smaller or larger, as desired.

Place the meatballs in the pan, a short distance from each other.

Put the tray in the oven. After 25 minutes, or when the meatballs have browned at the base, turn them over on the other side with a spoon.

After a quarter of an hour (or when they have browned on the surface), you can remove the tray.

Let them cool, then you can put them on a plate.

Serving ideas

Meatballs with rice and potatoes can be served with a salad of vegetables or greens, with tomatoes, cucumbers, olives, pickles or various sauces.

You can also use them for fasting sandwiches.

Potato puree contains fiber, potassium, vitamin A, B vitamins and vitamin K.

Those on a diet who want to reduce their carbohydrate intake can replace mashed potatoes with boiled cauliflower puree.
