I was looking at the abundance on the stalls and I could already imagine its taste ... the vegetables in the autumn are so wonderful .. . juicy, full of aroma and taste, I can tell you that I enjoyed every bit .... and while I cleaned them I really ate with gusto .... I was one step away from having nothing to put on my plate: )))))

  • 1/2 sweet cabbage

RECIPE PREPARATION Sweet autumn cabbage salad:

First clean and wash the broccoli, then boil it in salted water and grind it into small bouquets. In a large bowl add the pineapple cut into small pieces (about 3-4 slices of pineapple). Grate half a celery, a carrot, an apple and add two tablespoons of seeds (of which you prefer) and a diced grilled chicken breast. Season with thyme, basil, salt and pepper, and finally sprinkle with lemon juice.

4. Beet salad with lemon, fried nuts and cream cheese

Wash the beets well, season with salt and pepper, sprinkle with olive oil and place in a pan, then add to the hot oven covered with aluminum foil. Leave for about 40 minutes until it becomes softer. Meanwhile, in a smaller bowl, mix the cream cheese (a can), lemon peel, three tablespoons of lemon juice, a teaspoon of mustard, a teaspoon of vinegar, salt, pepper and olive oil. When the beets are ready, take them out of the oven, leave them to cool, clean them and cut them into cubes. Then mix with 350 g thinly sliced ​​fennel, fried walnuts, 2 tablespoons capers and cream cheese dressing.

5. Baked pumpkin salad with vegetables and seeds

In this tasty salad there are many autumn foods beneficial for a healthy body. You need 300 g baked pumpkin, a packet of baby spinach, 3 finely chopped red cabbage leaves, a tablespoon of sunflower seed core, a tablespoon of sesame seeds, olive oil, freshly chopped parsley, a pepper greasy, a red apple and two tablespoons of lemon juice. Wash the spinach leaves well and put them in a bowl, add the chopped cabbage, the diced pumpkin, the sliced ​​apple, the sliced ​​pepper and the rest of the ingredients, then at the end pour the lemon juice and olive oil.


Ingredients needed sour cabbage salad:

In winter I have old-fashioned cabbage, a little (not to be confused with the barrel in which the wine is kept), but today, in September, I do not want to encourage the traffic of sour cabbage in the market (for this product, only peasants do not show those weirdos for selling sauerkraut and I don't trust what they cook) I make sour cabbage 2-3 times a summer. There are other reasons why I don't necessarily take it from the supermarket, namely the juice that interests me for soups and that I prefer to the borscht in the store.

Cabbage chopped with dill and salt water. It increases in 4-5 days. It does not need to be held in a special place. It must be pruned daily so that it does not catch a flower.

I soured the cabbage like this: I chopped a large cabbage, 2-3 bunches of dill, I prepared warm salted water in a pot and I put the cabbage and dill. We put a lid on, cover it once a day with a straw for drinking juice (we put the straw in the pot with the cabbage and we blow to set the mill in motion) and in 4 days it is ready. So I also have sour cabbage for various dishes and about 4-5 liters of juice. I have an attachment to cabbage juice and for me it is in the top five, generically speaking, foods, the most beneficial to health.

1. Mix the chopped sauerkraut with 2-3 diced tomatoes and finely chopped celery leaves to properly capitalize on the flavor. The chopped celery gives flavor and personality to the sour cabbage.

2. Sprinkle with freshly ground pepper, a teaspoon of paprika, a tablespoon of oil and mix well. Let the ingredients rest for 30 minutes.

You can also put sweet broth, from the homemade one, which works much better than the one from the trade. In this case, we give up tomatoes.

There is also a preparation that can replace tomatoes or broth and that harmonizes perfectly with sour cabbage, namely vegetable soup, prepared in autumn from tomatoes, bell peppers and chopped celery. This vegetable is similar in consistency to the broth but the vegetables are not passed through the machine and are flavorful and sour. Of course, the dominant figure in the salad must remain sour cabbage.

Sour cabbage salad with broth has a sweet taste while the vegetable salad for soups remains vigorously sour. Spices and oil are maintained for any variant of sour cabbage salad.


AUTUMN RECIPES

Olteneasca-Ciolomada salad

Olteneasca-Ciolomada salad, is one of my favorite pickles. In it you can find a mix of vegetables, cabbage, onions, cucumbers, donuts, carrots. It is a sweet and sour pickle.

Let's see what ingredients we need to prepare it.

Olteneasca-Ciolomada Salad & # 8211 Ingredients

1.5 kg of autumn cabbage,
1.5 kg cucumbers,
1.5 kg bell peppers (or donuts)
1/2 kg onion, 3-4 sliced ​​carrots
200 ml vinegar,
loose salt,
sugar to taste,
1/2 tablespoon peppercorns
1 teaspoon salicyl (or preservative powder),
1 bay leaf in each jar, and a horseradish stick

Olteneasca-Ciolomada Salad & # 8211 Preparation

The cabbage is cut faithfully, taking care to remove the back first. Wash the cucumbers well with a sponge and cut the slices (I did not clean them to give a more beautiful color to the salad).

Peeled and washed carrots will also be cut into thin slices. If you don't like carrots, you can give them up. Onions are cut into scales. Bell peppers or donuts (I chose to put donuts this year) will be cut into slices.

Put all the vegetables in a large bowl and mix. Add the vinegar, salt and sugar to taste.

To the mixture, add the salicyl or preservative powder and leave it to pickle for at least 3-4 hours until the vegetables soften and leave the juice.

During this time it will be mixed in Ciolomada several times. Along the way you can add salt, vinegar, sugar depending on your taste.

If you don't have time to put it in jars, you can leave Olteneasca-Ciolomada Salad to stay from one day to the next. After Ciolomada is pickled, add the peppercorns and bay leaf.

Mix and place in Olteneasca-Ciolomada Salad jars. In each jar we put a small bay leaf and a clean horseradish stick.

To prepare the cabbage salad, you need to cut and discard the outer leaves of the cabbage, then wash the cabbage with cold water. The cabbage head is cut into 2 halves and depending on the amount of salad you want to prepare, you will use all the cabbage, or just one of the halves.

Finely chop the cabbage using a well-sharpened kitchen knife. To make it easier, cut the cabbage in half and chop a quarter of the cabbage. The leaves will remain attached to the spine around which you will chop the thin strips of cabbage.

In a large bowl, mix the chopped cabbage with 1 teaspoon of salt, then mix in a large glass 3 tablespoons of vinegar, 3 tablespoons of olive oil and 3 tablespoons of water and then pour over the cabbage. Mix the chopped cabbage well with the liquid and thus obtain an absolutely delicious white cabbage salad. If you do not tolerate vinegar, use the juice of 1 or 2 lemons.

If you do not have white cabbage, you can also use red cabbage, but be careful that it will stain your skin while you chop it and mix it with salt.
