Red Cabbage Salad With Apples Walnuts And Raisins

Red cabbage salad with apples, nuts and raisins is a popular recipe in America. It is probably one of the oldest recipes with which Europeans arrived on the American continent. It's simple, with ingredients that many of us have around the house.

I found this recipe in an old, forgotten book with American recipes from 1930. I quickly adopted it, because I, personally, like the texture and how the ingredients combine with each other. It seems balanced in the combination of sweet, sour and salty, and the mixture of cabbage, apples, nuts and raisins is a delicious one.

Not to mention the benefits of red cabbage in terms of vitamins and natural fiber that help digestion. It is perfect in winter with pork or beef steaks.

The recipe is also good when fasting. It is eaten in autumn with pumpkin or other baked vegetables, mashed potatoes, etc. I invite you to try it and tell me if you liked it.

We served it with pork steak, in addition to which we added some baked pumpkin, plain, with cinnamon and very little sugar.

To make the recipe, in principle, you don't have much to do. Cut or grate the apples and cabbage, cut the onion scales (or julienne), put everything in a salad bowl, throw over them a handful of nuts (or pecans - you have at hand) cut smaller, raisins (you can use dried cranberries instead of raisins) and make the vinaigrette from the recipe below. Mix well and leave for 5-10 minutes (until you set the table), so that the ingredients are friendly with each other.

The name of the recipe is more complicated than the preparation process. I hope you find it useful!

Autumn cabbage - general features and benefits

1. Cabbage prevents colon cancer

Several studies have concluded that regular consumption of cabbage can reduce the risk of colon cancer due to the large amount of fiber it contains. The beneficial substances we find in cabbage also help to increase estrogen production thus leading to the prevention of breast and ovarian cancer.

2. Slow down the aging process

Cabbage is an excellent source of vitamin C and beta-carotene (which comes from vitamin A), and the juice it contains helps slow down the aging process.

3. Prevents Spina Bifida disease

Spina bifida is a congenital condition of the spine and is manifested by incomplete formation of the spine, which can be found in newborns. Pregnant women who eat cabbage can reduce the risk of this condition.

4. Heal the ulcer

Because it is a plant with anti-inflammatory properties, cabbage prevents ulcers. Those who suffer from this condition can use the juice obtained from cabbage to heal.

5. Decreases blood cholesterol levels

As you probably know, there is a combination of "bad" cholesterol and "good" cholesterol in your body. When the "bad" is in a larger amount than the "good", you are prone to contracting various diseases, especially cardiovascular. Cabbage, through the substances it contains, can reduce the level of "bad" cholesterol, protecting you even from heart attacks. The best way to get this important benefit is to eat steamed or boiled cabbage. The nutrients you need are released faster by circulating quickly in the body.

6. It helps you lose weight

One of the most popular diets for weight loss is with cabbage. In addition to being low in calories, cabbage also helps burn fat through the content of vitamin C. In addition, consuming cabbage, the feeling of hunger will be diminished for quite a long time.

7. Helps cleanse the skin

Skin problems can be easily solved by eating. Due to its high vitamin D content, cabbage is one of the foods that cure acne.

8. Improves the immune system

The ingredient called sulforaphane helps create antioxidants that fight infections (hence the quality of fighting cancer). The cells are no longer affected and the production of enzymes accelerates the detoxification process.

9. Promotes muscle growth

Cabbage contains iodine, a substance necessary for muscle growth, but especially for increasing strength. By becoming stronger, you will be able to do more workouts that can further lead to muscle mass gains. Also, the juice obtained from cabbage is recommended during the recovery period, after training, because it releases the pain after the formation of lactic acid in the muscles, disinfects the colon and energizes you.

10. Supports brain functions

Vitamin K, which we find in cabbage, supports cognitive function and concentration, preventing damage to neurons and protects us from Alzheimer's and dementia. Red cabbage has the highest amount of vitamin K.

In addition to all this, free radicals and uric acid, which cabbage consumption can remove, are the main cause of rheumatism, gout, arthritis, skin problems, etc.

11. Cabbage is a good treatment for headaches

Cabbage is an external treatment for removing headaches and swelling. A warm compress with cabbage leaves relieves pain: put a crushed cabbage leaf between two cotton cloths and apply it on the forehead to get rid of migraines. In the case of chronic ones, the consumption of juice is also recommended (25-50 ml per day).

Ingredients needed sour cabbage salad:

In winter I have old-fashioned cabbage, a little (not to be confused with the barrel in which the wine is kept), but today, in September, I do not want to encourage the traffic of sour cabbage in the market (for this product, only peasants do not show those weirdos for selling sauerkraut and I don't trust what they cook) I make sour cabbage 2-3 times a summer. There are other reasons why I don't necessarily take it from the supermarket, namely the juice that interests me for soups and that I prefer to the borscht in the store.

Cabbage chopped with dill and salt water. It increases in 4-5 days. It does not need to be held in a special place. It must be pruned daily so that it does not catch a flower.

I soured the cabbage like this: I chopped a large cabbage, 2-3 bunches of dill, I prepared warm salted water in a pot and I put the cabbage and dill. We put a lid on, cover it once a day with a straw for drinking juice (we put the straw in the pot with the cabbage and we blow to set the mill in motion) and in 4 days it is ready. So I also have sour cabbage for various dishes and about 4-5 liters of juice. I have an attachment to cabbage juice and for me it is in the top five, generically speaking, foods, the most beneficial to health.

1. Mix the chopped sauerkraut with 2-3 diced tomatoes and finely chopped celery leaves to properly capitalize on the flavor. The chopped celery gives flavor and personality to the sour cabbage.

2. Sprinkle with freshly ground pepper, a teaspoon of paprika, a tablespoon of oil and mix well. Let the ingredients rest for 30 minutes.

You can also put sweet broth, from the homemade one, which works much better than the one from the trade. In this case, we give up tomatoes.

There is also a preparation that can replace tomatoes or broth and that harmonizes perfectly with sour cabbage, namely vegetable soup, prepared in autumn from tomatoes, bell peppers and chopped celery. This vegetable is similar in consistency to the broth but the vegetables are not passed through the machine and are flavorful and sour. Of course, the dominant figure in the salad must remain sour cabbage.

Sour cabbage salad with broth has a sweet taste while the vegetable salad for soups remains vigorously sour. Spices and oil are maintained for any variant of sour cabbage salad.

Olteneasca-Ciolomada salad

Olteneasca-Ciolomada salad, is one of my favorite pickles. In it you can find a mix of vegetables, cabbage, onions, cucumbers, donuts, carrots. It is a sweet and sour pickle.

Let's see what ingredients we need to prepare it.

Olteneasca-Ciolomada Salad & # 8211 Ingredients

1.5 kg of autumn cabbage,
1.5 kg cucumbers,
1.5 kg bell peppers (or donuts)
1/2 kg onion, 3-4 sliced carrots
200 ml vinegar,
loose salt,
sugar to taste,
1/2 tablespoon peppercorns
1 teaspoon salicyl (or preservative powder),
1 bay leaf in each jar, and a horseradish stick

Some ideas with seasonal pickles.

  • Cabbages Stuffed with Cabbage
  • Donuts stuffed with grapes

Let's see now how we will prepare this pickle which we call Csalamade, others call it Ciolomada, and others say it is Olteneasca Salad!

Olteneasca-Ciolomada Salad & # 8211 Preparation

The cabbage is cut faithfully, taking care to remove the back first. Wash the cucumbers well with a sponge and cut the slices (I did not clean them to give a more beautiful color to the salad).

Peeled and washed carrots will also be cut into thin slices. If you don't like carrots, you can give them up. Onions are cut into scales. Bell peppers or donuts (I chose to put donuts this year) will be cut into slices.

Put all the vegetables in a large bowl and mix. Add the vinegar, salt and sugar to taste.

To the mixture, add the salicyl or preservative powder and leave it to pickle for at least 3-4 hours until the vegetables soften and leave the juice.

During this time it will be mixed in Ciolomada several times. Along the way you can add salt, vinegar, sugar depending on your taste.

If you don't have time to put it in jars, you can leave Olteneasca-Ciolomada Salad to stay from one day to the next. After Ciolomada is pickled, add the peppercorns and bay leaf.

Mix and place in Olteneasca-Ciolomada Salad jars. In each jar we put a small bay leaf and a clean horseradish stick.

Thank you!!

To prepare the cabbage salad, you need to cut and discard the outer leaves of the cabbage, then wash the cabbage with cold water. The cabbage head is cut into 2 halves and depending on the amount of salad you want to prepare, you will use all the cabbage, or just one of the halves.

Finely chop the cabbage using a well-sharpened kitchen knife. To make it easier, cut the cabbage in half and chop a quarter of the cabbage. The leaves will remain attached to the spine around which you will chop the thin strips of cabbage.

In a large bowl, mix the chopped cabbage with 1 teaspoon of salt, then mix in a large glass 3 tablespoons of vinegar, 3 tablespoons of olive oil and 3 tablespoons of water and then pour over the cabbage. Mix the chopped cabbage well with the liquid and thus obtain an absolutely delicious white cabbage salad. If you do not tolerate vinegar, use the juice of 1 or 2 lemons.

If you do not have white cabbage, you can also use red cabbage, but be careful that it will stain your skin while you chop it and mix it with salt.
