Ingredient:

• 1 packet puff pastry (375 g)
• 200 g mascarpone
• 200 g whipped cream
• 2 teaspoons of ness
• 3 tablespoons sugar

Method of preparation:

1. Put all the ingredients in the bowl of the mixer (except the puff pastry, dohh :)).
2. Mix until it becomes a homogeneous composition, a fine and dense cream. Store in the refrigerator.
3. The oven is heated to 200 degrees, and the dough is spread on a surface sprinkled with flour. With the help of a glass, cut circles, put them in a tray lined with baking paper.
4. The puff pastry is pricked with a fork from place to place, to avoid its swelling.
Cover with baking paper, and place another tray on top.
5. Bake at 200 degrees for about 20 minutes.
6. After they have cooled, the mini sheets are filled with mascarpone cream and chopped almonds in chocolate. We will get about 5-6 cakes, it depends exactly on the amount of puff pastry and the size of the glass.
Leave overnight in the refrigerator.


Assembly mode

INGREDIENTS

For the countertop:

2 teaspoons vanilla essence

For the cream:

500 ml whipped cream

1 teaspoon vanilla essence

1 teaspoon orange essence

50 ml whipped cream

First we prepare the countertop. As long as it stays in the oven, then let it cool, we have time to prepare the cream.

Separate the eggs and start mixing the yolks with the sugar added gradually. We do this until the sugar melts and the composition doubles in volume. Then add the oil and cooled espresso. Incorporate flour previously mixed with cocoa and baking powder. Separately, mix the egg whites with a pinch of salt until they harden well and incorporate them into the dough, stirring gently from the bottom up. Pour the dough into the large baking tray, lined with baking paper.

Bake the top for 10 minutes in the preheated oven at 180 ° C. When it is ready, put it over a damp towel and roll it with baking paper (peeled off beforehand).

To prepare the cream, start mixing the mascarpone with the sugar for 1 minute. Add the whipping cream and mix until it thickens and the mixture becomes fluffy. Add the grated orange peel and vanilla essence. We keep 1/3 of the cream for the final decoration.

We start assembling the cake. Remove the top from the towel, spread it out and cut it lengthwise into 4 strips of equal size. Grease them with cream and start rolling one strip after the other until you get the cake. We cover it with preserved cream, then we glaze it. The icing is obtained by pouring hot cream over coffee and chocolate. Mix them until the chocolate melts, let them cool, then we can decorate the cake.

& # 8211 1 gelatin sachet
& # 8211 1 espresso

& # 8211 20 gr butter
& # 8211 50 ml fresh

Work plan:
& # 8211 Separate the egg whites from the yolks. Beat the egg whites with a pinch of salt, then finally add half the amount of sugar, until you get a thick foam (picture 2).
& # 8211 Mix the yolks with the rest of the sugar, until the volume doubles (picture 3). Mix in a bowl flour, the 4 tablespoons of cocoa and baking powder (picture 4)
& # 8211 Add the yolks over the egg white foam and mix with a silicone spatula (pictures 5 and 6). Lightly incorporate the oil, then add the flour mixture and mix with the same silicone spatula (picture 7). We place the obtained composition in a baking dish lined with baking paper (picture 8). Leave in the hot oven for about 30 minutes at 180 degrees, until it passes the toothpick test.
& # 8211 We are preparing for the cream and syrup (picture 9). For the syrup I used 200 ml of water, 3 tablespoons of sugar and an espresso. I left the water with the sugar on the fire until the sugar dissolved, then I added espresso (picture 10). Let it cool.
& # 8211 Batem frisca (picture 11). Separately, in another bowl, mix the mascarpone with powdered sugar and espresso (picture 12), until you get a cream (picture 13). Put the gelatin to soak for 10 minutes in 100 ml of cold water (picture 15).
& # 8211 In the meantime we syrup the top with detachable walls (picture 16). After 10 minutes, put the gelatin on the fire and let it dissolve without boiling, then let it cool for 2 minutes. Caution must not be strengthened. Add it over the mascarpone cream and mix (pictures 16 and 17).
Add the whipped cream and mix well with the silicone spatula (picture 18) and the cream is ready.
We place the obtained cream over the syrup cake top (picture 19). Let cool for at least an hour.
& # 8211 For the icing, put all the ingredients in a bowl, leave it on the fire on the water bath, until it dissolves and we get a chocolate cream (picture 21). Decorate the cake, then leave it to cool overnight to harden the cream (picture 22)
