We keep the acacia flowers in cold water for a few minutes to come to the surface of the beetle that hides in them. In a bowl, beat the eggs well with powdered sugar, 3 tablespoons of oil, a pinch of salt, lime zest, baking soda, flour and then add a little milk, stirring constantly so that no lumps form. When we reach the consistency of a slightly thicker pancake dough, we stop and let it rest for 10 minutes.

We hold each inflorescence by the tail, pass it through the dough well to penetrate all the flowers, then we put them in the pot with hot oil. We take them out on kitchen paper, powder them with sugar and serve them hot

ACACLE - biblical flower, healing of diseases

Acacia is mentioned in the Bible as a blessed tree. As the Old Testament accounts in the Exodus show, the wood of this tree is as valuable as the precious metals — gold, silver, and copper.

God commanded Moses to use the acacia wood to make the ark of the law, a table for the bread brought as an offering, pillars for the tabernacle of the congregation, and the altar of incense. (Old Testament, Exodus 25: 5).

The acacia that grows in the Holy Land (Acacia Tortilis) is different from our Romanian acacia (Robinia pseudoacacia). We will talk in this article about the acacia with white flowers, strongly smelling from our country.

Acacia flowers, leaves, seeds and bark are used for therapeutic purposes, although their chemical composition differs. The seeds contain calcium, protein, fat, fiber, phosphorus and many other vitamins and minerals in small amounts. Acacia flowers can be eaten as such, raw, added to salads, yogurt, milk cereals, pancakes, donuts, lemonades, syrups, cocktails.

Pancakes with acacia flowers

Spring is about greenery, about flowers and flowering trees, and acacia, with its delicate scent, always delights our senses. Usually, at this time of year, I filled the vase with acacia flowers. This time I decided to use them for dessert. They have a subtle aroma and many beneficial owners.

Ingredient:
  • 250 grams of flour
  • 50 grams of sugar
  • 4 teaspoons baking powder
  • a pinch of salt
  • an egg
  • 350 milliliters of milk
  • 50 grams of melted butter
  • vanilla essence
  • 150 grams of acacia flowers
Method of preparation:

I mixed in a bowl all the dry ingredients: flour, sugar, baking powder and salt. Then I prepared the liquid ingredients, mixing the egg with the milk, butter and vanilla essence. I added the liquid ingredients over the flour and mixed them slowly, until a homogeneous composition resulted. Be careful not to mix too much because the dough will not be as fluffy.

I let the dough rest for 5-10 minutes. During this time, I tore the acacia flowers from their twigs, washed them well and let them strain. After the dough rested, I added the acacia flowers and mixed well to cover with the dough.

To fry the pancakes, I put a pan on medium heat in which I melted a little butter and used about 3 tablespoons of dough for each pancake. I poured in a round shape, then I let the dough fry until bubbles appeared on the surface and I turned it on the other side. I did the same with each pancake, until I finished all the dough.

Raspberry Sauce Ingredients:
Method of preparation

I set the raspberries on fire with acacia honey and water, and when it started to boil, I stirred continuously until the sauce started to set. Then I took the sauce off the heat and served it with the pancakes. Enjoy your meal!
