Plum cake

  • 40 ml oil

Method of preparation

Separate the egg whites from the yolks.

Mix the yolks with the oil, like mayonnaise. Add the vanilla sugar.

Mix the egg whites with a pinch of salt, then add the sugar in three stages, mixing after each stage.

Mix until the composition is firm, it forms spikes to the touch and the sugar is diluted.

Add lemon juice and egg yolks with oil.

Homogenize by stirring gently from the bottom up, moving at the same time, circularly, the bowl in which you mixed.

Add the previously sifted flour and at the end the diced plums that you have previously powdered with the flour.

Homogenize everything by mixing gently, lightly with a spatula until everything is perfectly incorporated,

Pour the composition for the plum cake into a 20 by 30 cm tray and level with a spatula.

Put the tray in the preheated oven and bake the cake on stage 2, at 155 degrees (low heat for the gas stove) for 45-50 minutes or until it passes the toothpick test and is slightly golden on the surface.

Powder it with sugar and portion it only when it has cooled well.

Remove the tart from the fridge, add the plums in an even layer, then the breadcrumbs mixture, and bake for 25-30 minutes, then add the cream and egg mixture and bake for another 15-20 minutes. .

Leave the tart in the form for half an hour to cool. Then remove and serve as such or with a cup of ice cream.

Clafoutis is a dessert that comes from France. It must contain eggs and milk. Traditionally there it is made with cherries, but a little diversity and imagination does not hurt! You can prepare it with plums (as in our recipe) or with peaches, strawberries or berries.


What ingredients did I use for the plum tart recipe?

  • 200 grams of butter
  • 3-4 tablespoons of milk
  • 2-3 tablespoons of yogurt
  • 600-700 grams of flour
  • a baking powder

  • 400-500 grams of well ripened plums
  • 1-2 tablespoons of sugar
  • 1-2 tablespoons of cinnamon

I mixed the flour with the salt, the baking powder, the sugar and the cold butter cut into cubes, until I obtained a sandy dough. I gradually added the yogurt and milk, and kneaded by hand only until I got a slightly sticky dough. The dough should come off easily by hand, but remain soft and elastic. Depending on the situation, you can soften it with milk or add flour.

After the dough was ready, I covered it with cling film and put it in the fridge for about an hour.

In the meantime, I prepared the plums. I took out the seeds, broke them into pieces and mixed them with the sugar and cinnamon.

When the dough had risen, I divided it into two unequal pieces (one about three-quarters of the dough and the other a quarter.
