Dough:

In a bowl, sift the flour, put the yeast, salt, sugar and mix them with a spoon.

Mix the orange juice with mineral water, start and pour the liquid gradually.

Knead well until the dough becomes smooth and slightly sticky.

Put the orange peel, oil and knead for about 2 minutes, until they are all well incorporated.

Cover the dough with a clean towel and leave it to rise for about 90 minutes, in a warm place away from the current.


When the dough is leavened, prepare filling:

Put the jam in a bowl, add the ground walnuts.

Put the walnut depending on how thick the jam is. Mine was right and I put about 6-7 tablespoons of ground walnuts.


Sprinkle the flour on the work table, turn the dough upside down.

We break the pieces, depending on how big the croissants you want. I broke 18 pieces of dough.

Spread each piece with the rolling pin, put the filling, then roll them and press the ends a little.

We place them in a tray lined with baking paper and let them rise for another 15-20 minutes.


Put them in the hot oven, at a suitable temperature, for 25-30 minutes, until they are well browned.

While the croissants are baking, prepare syrup:

Mix lightly warm water with powdered sugar until the latter is dissolved.

Add the oil, vanilla and turn well.

When the croissants are ready, take them out of the oven and grease them well with syrup.


Cover them well with cling film, then with two thick towels.

Serve hot, but keep the rest covered with foil and towels because they will not harden.

I powdered them with sugar before serving.

Make a refreshing drink that you can drink during the day. Peel a squash, grate it and squeeze the juice. Add freshly squeezed orange juice, a lemon and a grapefruit. Mix well. Strain the fruit and add at least 500 ml of mineral water to the juice. This drink is rich in active compounds, fruit enzymes and vitamin C.

HOT FRUIT SALAD

Remove the seeds and cut into thin slices 2 peaches, 2 nectarines and 2 large blue plums. Put in a Teflon pan and add a little cinnamon, half a vanilla bean and possibly sweetener. Boil the stewed mixture for about 5 minutes, stirring constantly. Sprinkle sliced ​​fried almonds. The salad is served hot.

Cut a small melon in half. Peel the pulp using a spoon, leaving the peel intact. Mix the melon pulp with various berries, a sliced ​​banana and a handful of raisins. Stir and fill half the watermelon. Refrigerate before serving.

Among the stars of the Christmas table, there were also these cookies that we have prepared so far several times, but which did not last to be able to take at least a picture so that we can show them to you. This time I put them well and until they were photographed, I did not put them on the table.

Here we show you the surprise received from Dr. Qetker for Christmas (all kinds of ingredients: powdered sugar, coconut, cocoa, vanilla pods, marzipan, etc.), enough ingredients for a few good days of baking, so we I got to work. We were inspired by here with small changes. A good thing, you must try them too!

Ingredient: (approx. 30 pieces)
250 g butter (or margarine if fasting)
150 g powdered sugar
3 teaspoons vanilla essence Dr. Qetker
peel of a lemon
400 g of flour
a pinch of salt
Filling:
500 g jam (plum we used)

1.Mix the butter well with the powdered sugar until it becomes a frothy cream then add the vanilla essence, lemon peel and gradually the flour and salt. Knead well, it will result in a softer dough with a sticky consistency. Leave the dough formed at room temperature for 30 minutes.
2.Lay strips of dough about 10-12 cm wide and 25-30 cm long on the work table, and add filling.
3.Roll them, then cut into pieces about 3-4 cm long and place them in a tray on baking paper. Put the tray in the oven (preheated to 160 degrees) for 30-35 minutes.
Powder them with powdered sugar while they are hot. Store in a metal box with a lid.

Orange pie Portokalopita

I couldn't find much information about this cake, although I wish I could tell you something interesting about its history. Portokalopita is a traditional Greek dessert, composed of thin pie sheets (also traditional), oranges (which do not originate in Greece, but have adapted very well and are grown here with great growth), Greek yogurt (how else? ) and other, less specific ingredients. The Greeks call it Portokalopita, which in translation means "orange pie".

In essence, a pancake-like composition is poured over the pie sheets, composed of eggs, sugar, yogurt, oil, orange peel and after baking, the cake is syruped with an orange juice syrup, flavored with cinnamon.

Pie sheets can be used in many ways. One option is to simply break them into small pieces. To facilitate this process, the sheets can be dried in the oven and then crushed very quickly. The second option is to fold / wrinkle the sheets, placing them side by side in the tray. The third option is the one I chose today: cut the dough sheets into strips the width of a finger, then spread them to separate from each other. You should know that if you choose the version with the whole sheets folded, the composition is poured over them, in the tray. For versions with crushed or cut sheets, they are mixed into the composition and then poured into the tray.

Another mention that must be made is related to the syrup of the cake. I chose to pour the cooled syrup over the hot cake. It is also possible to do the opposite, ie to pour the hot syrup over the cooled cake. In any case, no matter what you choose, it is important that one of the components (either the pie or the syrup) is hot and the other is not.

It is preferable to use organic oranges, whose peel is edible or you can buy grated orange peel, it can be found at spice shops and even at the hypermarket, in the district where the essences are found.


  1. Put the sugar in a saucepan or robot and spray it.
  2. Put the sugar and lemon peel in the food processor and blend until the composition is like a paste.
  3. Add the warm milk (37-40 ° C) and mix until the sugar is completely dissolved.
  4. Put the yeast & icircn milk, mix well, then let it dissolve for 5 minutes.
  5. In a bowl put the flour mixture, over which pour the milk mixture and incorporate with a fork or a spatula.
  6. Add eggs, butter, vanilla, salt, then knead well.
  7. Form the dough into a ball, grease it with a little oil, cover it with cling film and leaven it until it doubles in volume (about 45-60 min).
  8. Roll out the dough into a sheet from which you cut triangles. Put the jam on the base, roll the croissants, then seal the v & acircrful. Place the croissants in a tray lined with baking paper and leaven them until they double in volume again (about 30-40 minutes).
  9. Bake the croissants in the preheated oven for 25 minutes at 180 degrees.
  10. Grease the croissants with a sauce resulting from mixing honey with water.

  2. Add the lemon & acircie peel and blend for 30 sec / vit 10.
  3. Add the milk and heat for 1 min / 37 minutes.
  4. Then add the yeast and mix for 30 sec / 37 & degvit 1, then allow the yeast to dissolve for 5 minutes.
  5. Add the flour, eggs, butter and knead for 4 minutes.
  6. The dough is left to rise for about 1 hour in an oiled bowl and covered with cling film.
  7. Roll out the dough and cut into triangles, place the jam at the base and roll. Seal the vinegar and leave it to rise for about 30 minutes.
  8. Bake in the preheated oven for 25 minutes at 180 degrees.
  9. Grease with the sauce resulting from mixing honey with water.

Very good and quite cheap, they can be taken in a package at school, if you want to replace the croissant with commercial chocolate, which the little ones always crave. The dough does not contain eggs, and the milk can be replaced with mineral water. From the quantities below, you get 32 ​​medium horns.
The basic recipe I found on the blog Isabel, I added a little more sugar and another tablespoon of cocoa. I was very pleased with the result (and the horns disappeared very quickly.).

Dough ingredient:
500 ml of milk or mineral water,
10 tablespoons sugar,
1 teaspoon salt,
2 tablespoons dry yeast,
170 ml oil,
3 tablespoons cocoa,
